Save the extra cordial for brunch beverages, desserts, or to make another batch of the drink.
Bikini Recipe
Serves 10 guests
For the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Put the listed items into a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Then, turn off the heat and let it to cool down completely. Transfer into a sealable bottle, close it and store in the fridge, where it will keep for about a month.
Preparing the Premix: Combine the specified liquids in a big jug, allow it to infuse for 60 minutes, then strain , ideally through muslin, to ensure it's perfectly clear.
To serve: Measure 85ml from the premix to a stirring glass packed with ice, and agitate gently for a minute until cold. Strain to a chilled martini glass or equivalent, top with the cranberries and finish with a light spray with the mandarin essence over the top.
